Thanksgiving is a hard enough holiday to survive, never mind adding in the the complications of the Keto Diet, but have no fear! I’ve compiled a few recipes that should make your life just a little bit easier. Not being able to eat turkey at Thanksgiving is hard enough to explain to your family, plus add the fact that you won’t be eating carbs!

Here is the first of the recipes, the rest will be coming later today! Hopefully these recipes alleviates some of the holiday panic…

Cheesy Mashed Cauliflower

Ingredients:

  • 2 bags of frozen cauliflower (about 4 cups each)
  • 4 ounces shredded cheese, plus a little to shred on top
  • 2 cloves garlic, minced
  • 1 tbs butter
  • 1 tsp pepper
  • 1/2 tsp salt
  • parsley, to garnish (fresh or dried)

This is super easy. Preheat your oven to 350. Take two bags of frozen cauliflower and let them thaw, or microwave them for quick cooking. Drain off excess water and toss it all in your food processor/blender. Pulse until the cauliflower is a rice-like texture. Then just add in the 4 ounces of shredded cheese, the butter, the garlic and salt and pepper. Blend until smooth. Toss into a baking dish and spread smooth. Sprinkle on cheese and parsley and bake for 30 minutes.

DONE.
