It should go without saying, but pesto is a keto-friendly food. It’s basically greens, nuts, (optional cheese) and oil. Traditionally, basil and pine nuts are used to make a pesto, but you can use pretty much any combination of greens and nuts. I like the combo of arugula and almonds because it has a bit of a bite, and tastes like spring time.

This pesto makes a great topping for mashed cauliflower or broccoli!

    • 2 cups fresh baby arugula leaves
    • 1/2 cup olive oil
    • 1 clove garlic
    • 2 tbsp almonds
    • salt and pepper to taste


    1. In a food processor, pulverize the clove of garlic and almonds.
    2. Add in olive oil and arugula and process until the leaves have been chopped and a paste forms. Add more oil if it thicker than you would like.
    3. Add salt and pepper a small pinch at a time and mix in. Stop adding when it tastes right to you!

See? Super, super easy. This recipe comes to about a gram of carbs per tablespoon.
