I’m officially obsessed with this recipe. It’s delicious, low carb, high in fiber and super nutritious. And delicious! Did I mention delicious? I would eat this every night if CM wouldn’t get sick of it…

This is a perfect spring detox recipe, as the sulfur compounds in both the broccoli and cauliflower help support your liver’s detoxification processes while the fiber helps to move everything out. The garlic in this has antifungal and antimicrobial properties while also being protective of your heart. Yeah, it’s pretty impressive.

A note: the raw garlic makes this really strong. If you aren’t so into garlic, cook it with the other veggies and it’ll be milder. Or leave it out altogether. Your choice!

Garlicky mashed cauliflower & broccoli

Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 3 peeled cloves of garlic
  • 1/2 tsp each of salt and pepper
  • butter to taste

Instructions

  1. In a wide pan on medium heat, salt and then sautée the broccoli and cauliflower in a bit of butter (or just in water!) until they can be easily pierced with a fork. This should cook the vegetables, giving them a nice roasted flavor and eliminating a lot of the water for a better final product.
  2. Add vegetables and garlic to your food processor and pulse until everything is pulverized and takes on the texture of roughly mashed potatoes.
  3. Add butter to taste and enjoy. It’s seriously delicious!

Notes

This recipe makes around 4 servings, and each packs around 50 calories, and 3 grams of net carbs. No, it’s not carbless, but it’s definitely worth “spending” those carbs points on.
