Mint Chip Low Carb Protein Bars

You’ve probably figured out by now that I’m obsessed with low carb protein bars. I’ve made LCHF and keto versions of peanut butter chocolate protein bars, strawberry cheesecake protein bars, mocha chip protein bars, pumpkin spice protein bars, and raspberry protein truffles (that could easily be shaped into bars). So, there was almost no convincing required to get me to make these mint chip low carb protein bars.

I really love the mint and chocolate flavor combination in a protein bar, and also literally every other application you can think of. Mint is so energizing!

They’re sugar free, nut free, gluten free, low carb, lchf and keto-friendly. Plus, they’re full of antioxidants. How, you ask? How are these bright green low carb protein bars possibly loaded with antioxidant power? Matcha powder! Yup. That bright green hue is totally a result of tossing some green tea in there. Green tea is also energizing, so between the mint, chocolate, green tea and protein powder – this is a pretty solid keto pre-workout snack!

Some notes on making these mint chip low carb protein bars:

  • The matcha is optional, though makes for a really pretty color, and is quite high in antioxidants. You can find matcha in most health food stores, and now even some regular grocery stores! Or the internet. I usually just do things on the internet. :p
  • Depending on your brand of Neufchatel/cream cheese, your mixture might be a little softer. The brand I used is pretty firm (usually the bricks are harder), but if you’re using one from a plastic tub, it might be softer. If your brand is a bit on the soft side, you can just sprinkle in more protein powder as you knead to get the desired consistency.
  • I used a pre-sweetened (though sugar free) protein powder, but if your protein powder is unsweetened, feel free to add 10 drops of liquid stevia.

Low Carb Mint Chip Protein Bars


  • 4 oz (1/2 cup) neufchatel cheese (or cream cheese/mascarpone)
  • 4 tbsp creamed coconut (also known as coconut manna, or coconut butter)
  • ~120 grams vanilla whey protein powder of choice (make sure it's sugar free!)
  • 1 tsp peppermint extract
  • 1/2 ounce (~14g) unsweetened bakers chocolate, chopped
  • 1/2 tsp matcha powder (for color!)


  1. With a fork, mash together cream cheese, matcha and creamed coconut.
  2. Add in vanilla whey protein powder. Combine until a dough forms. I used my hands here, and kneaded it until everything was completely mixed in. And yes, I used exam gloves to keep my hands clean because I am a baby.
  3. Sprinkle chopped chocolate over dough, and keep kneading until they're evenly distributed.
  4. Press dough mixture into a silicon pullman loaf pan or a regular pullman loaf pan that has been lined with parchment/wax paper and chill for 10-20 minutes. You don't want it hard, just a little chilled.
  5. Turn out loaf onto a cutting board and slice into 8 equal pieces.
  6. Wrap in wax paper and store in the fridge!

      Good question, Jessaca! I just used a standard loaf pan for this, which is about 4×9 inches. 🙂
