Low Carb Strawberry Cheesecake Protein Bars

After realizing just how delicious my last attempt at a low carb homemade Quest bar turned out, I decided to try making another one of my favorite flavors: Strawberry Cheesecake.

This one is again, 2g net carbs per serving, and contains no almonds which I’m allergic to!). It’s super delicious, though. Trust me there. I’ve made two batches in two days because my (not-low-carb-eating) boyfriend demolished batch 1 while I was at work!

Low Carb Strawberry Cheesecake Bars

Ingredients

Instructions

  1. With a fork, mash together cream cheese and creamed coconut.
  2. Add in strawberry protein powder and combine until completely mixed, and a dough forms. I used my hands here, and kneaded it until everything was completely mixed in. And yes, I used exam gloves to keep my hands clean because I am a baby.
  3. Crumble freeze dried strawberries over dough, and keep kneading until they're evenly distributed.
  4. Press dough mixture into a silicon pullman loaf pan or a regular pullman loaf pan that has been lined with parchment/wax paper and chill for 10-15 minutes. You don't want it hard, just a little chilled.
  5. Turn out loaf onto a cutting board and slice into 6 equal pieces.
  6. Wrap in wax paper and store in the fridge!
  7. Food to face.
