Vegetarian Low Carb Fried Rice

I’m always looking for some vegetarian low carb dinner options. Yes, veggies do have carbohydrates, but they’ve also got so many micronutrients that your body needs in order to function, so it evens out. I’m always willing to add a few carbs to my day in order to get some more veggies in. Anyway, I’ve really been craving fried rice lately, and so I thought this low carb fried rice (well, “rice”) would do the trick nicely.

This recipe is absurdly easy. It’s almost silly to call it a recipe, but I’m going to anyway. All ingredients can be purchased at Trader Joe’s, and probably Whole Foods, so it’s not too much of a struggle to gather the necessary foodstuffs. Cauliflower “rice” is used in place of actual rice here, and can be purchased frozen or made yourself at home. It’s a really easy process that will get its own little tutorial here:

How to Make Cauliflower Rice

  1. Cut florets off the the head of cauliflower, leaving the stalk. Use florets however you normally would. You can also chop up the florets with the stalk if you want more rice, and don’t really love cauliflower.
  2. Chop stalk into 1-2″ pieces.
  3. Place all cauliflower pieces in your food processor, and pulse until they are rice sized bits. Really.
  4. ALTERNATE METHOD: Use a box grater, and grate the cauliflower (florets and stalk, or just stalk) on the large setting, into rice. Seriously. That’s it.

Notes on Making Low Carb Fried Rice

  • Cauliflower rice is super easy to make, so not finding it in stores isn’t really an issue. 🙂
  • I used Bragg’s Liquid Aminos here, but soy sauce, tamari, or coconut aminos will all work as well
  • No, you don’t need to put eggs in this, but I like them, so I did.
  • Sesame oil can be replaced with olive oil, coconut oil, butter or whatever cooking oil you prefer!

Vegetarian Low Carb Fried Rice

Ingredients

  • 1 package (or about 3 cups) cauliflower rice
  • 1 cup chopped frozen spinach
  • 2/3 cup mixed frozen veggies
  • 1 tbsp sesame oil
  • 2 tbsp Bragg's Liquid Aminos
  • 1 tsp garlic powder
  • 4 eggs

Instructions

  1. Heat oil in a pan on medium heat.
  2. Add in cauliflower, spinach and liquid amigos, and heat until thawed.
  3. Stir in frozen veggies and continue heating until warmed through.
  4. Make a well in the center of the veggies - crack in 4 eggs and scramble (gently!).
  5. As the eggs in the middle cook, start stirring them into the rest of the recipe, so there are bits of scrambled egg mixed throughout.
  6. Continue cooking until eggs are done.
