Vegan Keto Peanut Butter Chocolate Pumpkins

Vegan Keto Peanut Butter Chocolate Pumpkins

Happy Halloween, everyone! Halloween is hands-down my favorite holiday of the year. I just love every aspect of it…except for the candy. I have yet to find a commercially-produced vegan keto candy that doesn’t upset my stomach. So, like with most things, any Halloween…

Basic Vegan Fat Bob-omb

Basic Vegan Fat Bob-omb

One of the pillars of many a ketogenic diet is fat bombs, and plant-based keto is no exception. There are going to be days where you look at your macros and realize that you’ve only got 1g of carbs left, but still somehow need 200…

No-Bake Vegan Keto Fudgey Brownie Bites (nut free, gluten free, soy free)

No-Bake Vegan Keto Fudgey Brownie Bites (nut free, gluten free, soy free)

There’s something about the weekend that makes me want to bake things. And then there’s something about the thought of waiting for the finished product that makes me want to not bake things. It’s not that I’m impatient, it’s that sometimes I’m hungry now, and so I want to eat chocolate now. You guys get it, right? So, this afternoon, once I’d finished some work, I thought I’d make myself a no-bake vegan keto fudgey treat.  (more…)

Vegan Mojito Fat Bombs (nut free, soy free, paleo)

Vegan Mojito Fat Bombs (nut free, soy free, paleo)

It’s been a while since I’ve really made any new fat bombs. Usually, I’m content with the same old thing (usually the Magic Mushroom ones – no, not that kind of mushroom…). But recently, I’ve been exploring some different flavor combinations. I saw a mojito…

Low Carb Vegan Apple Pie Bites

Low Carb Vegan Apple Pie Bites

I’m not sure if I’ve mentioned this before, but apple pie is my absolute favorite dessert, ever. If you told me that I could only eat apple pie for the rest of my life, I think I’d actually be pretty okay. Of course, apple pie…

Low Carb Vegan Lemon Squares

Low Carb Vegan Lemon Squares

I know this makes me a little weird, but my favorite dessert flavor is actually lemon. Chocolate is nice and all, but I would take a tangy and tart lemon square over a piece of chocolate cake any day of the week. No question. When I was eating fairly high carb, I loved to make this one lemon square recipe all the time out of The Vegetarian Cookbook for Teens. That book was my go-to for recipes when I first went veggie at 11-12. The lemon square recipe was basically a shortbread crust with a tofu lemon topping, and it was sugary and delicious. My goal is to try and approximate that lemony feeling with a low carb vegan version. (more…)

Low Carb Vegan Pumpkin Spice Fat Bombs

Low Carb Vegan Pumpkin Spice Fat Bombs

So, I’m going to do my best to refrain from posting a million pumpkin spice recipes between now and Thanksgiving, but realistically, there will be a few more. I got this adorable pumpkin candy mold today and decided my first task would be to make something…

Low Carb Vegan Mint Matcha Fat Bombs

Low Carb Vegan Mint Matcha Fat Bombs

Sometimes, you don’t want to cook, or deal with any sort of food prep at all. In those moments, it’s wonderful to be able to reach into your fridge/freezer and grab a ready-to-go fat bomb – something super low in carbs, and filling. Lately, I’ve…

Vegan Keto Magic Mushroom Fat Bombs

Vegan Keto Magic Mushroom Fat Bombs

In years past when I’ve done keto, I definitely haven’t given enough appreciation to fat bombs. Sure, I’d make the occasional lazy vegan keto fudge out of cocoa powder, coconut oil and stevia (directions: eyeball ingredients, mix together and keep adding more of any of those three things until it tastes good), but I never really got into making fat bombs that were in any way more complicated than that. Recently, though, I’ve really been appreciating the simplicity of having a snack that is super low in carbs, and also contains some fun superfoods to boot. (more…)

Blueberry Lavender Vegan Fat Bombs (nut free!)

Blueberry Lavender Vegan Fat Bombs (nut free!)

I spend a lot of time on instagram, browing various keto-related hashtags, and when I saw a post the other day from The Wholesome Holistic, I just had to try the recipe. After this weekend’s carb-up (where honestly, I didn’t feel that great after), I…
