Vegan Keto Carrot Cake Waffles (gluten-free, grain-free, coconut-free, soy-free, nut-free)

Ahoy, friends! Spring is in full blast here in New England, and since I’ve been hanging around my house a lot lately (as I imagine most of you have as well), I’ve been doing a lot of springtime cooking and baking. If you’ve been reading

Vegan Keto Red Velvet Waffles (gluten-free, coconut-free, soy-free)

Vegan Keto Red Velvet Waffles (gluten-free, coconut-free, soy-free)

We’re on the eve of Valentine’s Day and I was craving something sweet that I could also use as an excuse to bust out my heart-shaped silicon mold to use for heart-shaped pats of buttery spread. So, I channeled my inner Leslie Knope and decided

Vegan Keto Buttery Noodles & Cabbage (gluten-free, dairy-free, soy-free)

Vegan Keto Buttery Noodles & Cabbage (gluten-free, dairy-free, soy-free)

If you follow me on instagram at all, you probably know that I LOVE cabbage. I eat it almost every day in some form or another, but I usually end up just sauteing it or making my favorite crack slaw. Sometimes, though, I want something that feels a little more substantive, something noodle-y. A dish I really liked back when I ate real pasta was a really simple dish made by sauteing cabbage and noodles in butter. This is my gluten-free, vegan, paleo and keto take on that very meal.

Low Carb Vegan Kołaczki (gluten-free, grain-free, nut-free)

Oh, look, I’m finally posting Christmas things just a few days before Christmas. I’m the worst. Because my dad’s family is Polish, I grew up eating a lot of Polish foods, especially at Christmas time. These cookies are  a staple from my childhood. They’re called

Vegan Keto Zucchini Noatmeal Breakfast Bars (gluten-free, soy-free, nut-free, low-FODMAP, paleo)

Vegan Keto Zucchini Noatmeal Breakfast Bars (gluten-free, soy-free, nut-free, low-FODMAP, paleo)

Breakfast can be one of the hardest meals to replace when going vegan keto, especially if you’re used to eating convenience foods. While I do enjoy a nice, hearty bowl of noatmeal or chia pudding, some days you just want something a little more substantial

My Favorite Vegan Keto Crunchy Snacks

My Favorite Vegan Keto Crunchy Snacks

One of the hardest things for me to replace on a vegan keto diet was crunchy snacks. I used to be a huge junk food eater, and pretty much inhaled anything crunchy, whether it was sweet or salty. Since going keto all those years ago, I’ve found quite a few different snack options to munch on when a craving strikes, and since you guys are always asking me what my favorite crunchy snacks are, I thought I’d post them here! Low Carb Vegan Peanut Ginger Cold Noodle Salad (gluten-free, grain-free, keto-friendly)

Low Carb Vegan Peanut Ginger Cold Noodle Salad (gluten-free, grain-free, keto-friendly)

It’s getting hotter out where I live, and some days, having to turn on the stove just doesn’t seem like a good idea. So, I’ve been making a lot of meals lately that require zero cooking. I really, really like peanut butter and peanut butter-adjacent

Low Carb Vegan Comfort Food: Tomato & Tofu Stir Fry (番茄豆腐)

Low Carb Vegan Comfort Food: Tomato & Tofu Stir Fry (番茄豆腐)

Even though summer is right around the corner here in New England, it’s actually been a little chilly here and there. Not actually cold, but just nice enough that I can get away with cuddling under a blanket with a nice big bowl of vegan

Super Easy Low Carb Vegan Cauliflower Pizza Crust (nut-free, soy-free, coconut-free)

Super Easy Low Carb Vegan Cauliflower Pizza Crust (nut-free, soy-free, coconut-free)

Like most North American humans, I enjoy eating pizza. A lot. It’s definitely up there in the top five for favorite foods. Of course, trying to come up with a vegan keto pizza crust has been a bit of a challenge over the years. I’ve made a “fathead” crust before, but it relies heavily on flax, and I’ve been trying to cut down on my flax consumption lately (it just doesn’t agree with my digestive system, sadly). So, I thought I’d try and come up with a flax-free low carb vegan pizza crust. I’d tried a commercially-produced cauliflower pizza crust before that I really liked, so I used that as inspiration and got into the kitchen! Low Carb Vegan Beet Hummus

Low Carb Vegan Beet Hummus

Hummus is a staple of a lot of vegan diets – it provides protein (including that sneaky amino acid lysine!), fiber, lots of minerals and is really, really tasty. For some reason, I’ve really been craving beets lately, and so this low carb vegan beet
