Brrrr…soup season is certainly upon us (or not, if you’re reading this from the future…). It’s chilly outside; it’s chilly inside; and everyone is sniffling. This vegan keto ginger pumpkin curry soup fixes all of those issues for me, and tastes darn delicious, too!
When people ask me what my favorite vegetable is, they’re often surprised to hear me reply, “cabbage.” Cabbage is a member of the cruciferous family and is not only delicious, but also brings with it quite a bit of nutrition. If you’ve been reading this […]
This past winter, I had the absolute honor (and pleasure!!) of working with the prepared foods team at Whole Foods Market to have vegan keto dishes featured on their hot bars. The dishes were released in 14 states (!!!) and were well-received by vegans and non-vegans alike. It was seriously one of the coolest experiences I’ve had, and going into my local WFM and being able to buy my own food on the hot bar was surreal. Since not everyone was able to find these dishes at their local store, and since they’ve made their way off of the food bars, I’ve decided to start posting them here. First up: Sauteed Kale & Butternut Squash with Toasted Pecans.
I really love peanut butter and all things associated with this delicious food. It’s a solid source of lysine, an essential amino acid found primarily in beans (for plant sources, at least). It can be difficult to obtain on a vegan keto diet, so I’m […]
Hiking is pretty much my favorite outdoor activity. Every summer/fall, my sister-in-law and I drive up to the White Mountains in New Hampshire to go hike up a few of NH’s 4000-footers. We like to treat these trips as little de-stressing vacations as well, so usually we find a reasonable hotel and plan 2-3 days worth of hikes in the surrounding area. We also tend to grab a salad somewhere for dinner, so we really only need to pack food for the actual hiking portion of the trip.
I always crave fresh berries in the summertime. I don’t know whether it’s the heat or the fact that I’m more active in warmer months, but either way, I tend to listen to my body and eat the darn things. Berries are pretty much my […]
It’s getting hotter out where I live, and some days, having to turn on the stove just doesn’t seem like a good idea. So, I’ve been making a lot of meals lately that require zero cooking. I really, really like peanut butter and peanut butter-adjacent […]
Hi, friends! As I recently shared on Instagram, I’ve been having some serious cereal cravings. Usually when this happens, I just make myself some vegan keto chocolate granola (from my cookbook!), this cinnamon granola, or some homemade granola bars… but every once in a while, it just doesn’t cut it and I want something that has been put through an industrial extruder. So, when I saw Catalina Crunch cereals, I knew I had to try them to see if it could help satisfy that craving.
Hello, friends! Let’s get right into it – who in their right mind doesn’t like crispy fries? If you answered, “me,” this might not be the recipe for you. But, for the rest of you intrepid veg-ketoers, stick around. I’m a huge fan of crispy […]
