Vegan Keto Tempeh Satay With Peanut Sauce

Vegan Keto Tempeh Satay With Peanut Sauce

I really love peanut butter and all things associated with this delicious food. It’s a solid source of lysine, an essential amino acid found primarily in beans (for plant sources, at least). It can be difficult to obtain on a vegan keto diet, so I’m […]

My Favorite Vegan Keto Crunchy Snacks

My Favorite Vegan Keto Crunchy Snacks

One of the hardest things for me to replace on a vegan keto diet was crunchy snacks. I used to be a huge junk food eater, and pretty much inhaled anything crunchy, whether it was sweet or salty. Since going keto all those years ago, […]

Raw Vegan Keto Strawberry Crumble (sweetener-free, paleo, low-FODMAP)

Raw Vegan Keto Strawberry Crumble (sweetener-free, paleo, low-FODMAP)

I always crave fresh berries in the summertime. I don’t know whether it’s the heat or the fact that I’m more active in warmer months, but either way, I tend to listen to my body and eat the darn things. Berries are pretty much my go-to keto-friendly fruit. Not only are they relatively low in sugar, but they’re also loaded with antioxidants and just plain delicious. Way back in the day when I was a high-carb raw vegan, I made berry crisps all the time, so I thought I’d adapt my favorite recipe to make this raw vegan keto strawberry crumble for the summer!

Vegan Keto Cereal Review: Catalina Crunch

Vegan Keto Cereal Review: Catalina Crunch

Hi, friends! As I recently shared on Instagram, I’ve been having some serious cereal cravings. Usually when this happens, I just make myself some vegan keto chocolate granola (from my cookbook!), this cinnamon granola, or some homemade granola bars… but every once in a while, […]

Low Carb Vegan Comfort Food: Tomato & Tofu Stir Fry (番茄豆腐)

Low Carb Vegan Comfort Food: Tomato & Tofu Stir Fry (番茄豆腐)

Even though summer is right around the corner here in New England, it’s actually been a little chilly here and there. Not actually cold, but just nice enough that I can get away with cuddling under a blanket with a nice big bowl of vegan […]

Vegan Keto Bibimbap (gluten-free, soy-free option)

Vegan Keto Bibimbap (gluten-free, soy-free option)

Bibimbap, which roughly translates to “mixed vegetables,” is a Korean dish involving rice, mixed veggies, often meat and gochujang sauce. This kind of goes without saying, but this vegan keto bibimbap here isn’t traditional in the least bit. It is, however, a delicious ode to this dish that is gluten-free, nut-free, peanut-free, coconut-free, low-carb, keto-friendly and can be made soy-free surprisingly easily. While there are many iterations of bibimbap (also bibimbop) on the internet, this particular low carb vegan version consists of the following: (more…)

Low Carb Vegan Beet Hummus

Low Carb Vegan Beet Hummus

Hummus is a staple of a lot of vegan diets – it provides protein (including that sneaky amino acid lysine!), fiber, lots of minerals and is really, really tasty. For some reason, I’ve really been craving beets lately, and so this low carb vegan beet […]

Vegan Keto Sushi Bowl

Vegan Keto Sushi Bowl

In my carb-eating days, veggie sushi rolls were one of my favorite things to eat. There’s something about the combination of cucumber, avocado and nori that’s just magical. Eating a grain-free, vegan keto diet can make finding sushi a bit more challenging. While many places […]

Super Easy Vegan Keto Nori Seaweed Salad

Super Easy Vegan Keto Nori Seaweed Salad

Seaweed salad is one of those foods that I really, really just whole-heartedly love. There’s something about the flavors that just makes me so happy. Unfortunately, it’s also one of those foods that tends to be difficult to find in a gluten-free capacity (not to mention that it’s pretty pricey to buy pre-made). So, I decided to put all that sushi nori I have in my pantry to good use and make a vegan keto nori seaweed salad. (more…)

No Bake Vegan Keto Lemon Squares (gluten-free, soy-free, paleo)

No Bake Vegan Keto Lemon Squares (gluten-free, soy-free, paleo)

There’s something I really want to get off my chest, and I’m not sure how everyone will take it. The truth can hurt, but I really feel it’s important to be open and honest, especially when it comes to food and diet. So, here goes: […]
