Vegan Keto Three Ingredient No-Bake Peanut Butter Cookies (gluten-free, soy-free, tree nut-free)

Vegan Keto Three Ingredient No-Bake Peanut Butter Cookies (gluten-free, soy-free, tree nut-free)

This week I thought I’d go back to my roots with a no-bake vegan keto cookie recipe. When I first started out on a vegan keto diet in 2012, there were no recipe blogs or books or social media accounts for vegan keto recipes or…

Low Carb Vegan Rugelach (gluten-free, dairy-free)

Low Carb Vegan Rugelach (gluten-free, dairy-free)

Holiday baking for me always means cookies. While closer to Christmas, I like to bake gingerbread, sugar cookies and kołaczki, during the festival of lights, it’s all rugelach for me. For those of you who aren’t familiar with rugelach (or rugelah), they’re a cream-cheese based…

Vegan Keto Carrot Cake Waffles (gluten-free, grain-free, coconut-free, soy-free, nut-free)

Vegan Keto Carrot Cake Waffles (gluten-free, grain-free, coconut-free, soy-free, nut-free)

Ahoy, friends! Spring is in full blast here in New England, and since I’ve been hanging around my house a lot lately (as I imagine most of you have as well), I’ve been doing a lot of springtime cooking and baking. If you’ve been reading this blog or following me on social media for an appreciable amount of time, you’ve probably figured out that waffles are one of my favorite foods. In fact, these past weeks I’ve been working on 3-4 different waffle recipes. A very normal amount. Anywho… up first are some vegan keto carrot cake waffles, just in time for Easter. (more…)

Flax-Free Vegan Keto Bagels (gluten-free-, soy-free, nut-free, coconut-free)

Flax-Free Vegan Keto Bagels (gluten-free-, soy-free, nut-free, coconut-free)

If there’s one thing I can guarantee when I post a recipe, it’s that people will ask about substitutions. I totally understand, as someone with a fair amount of restrictions, but no matter how many different substitutions I try to include in the notes, someone…

Vegan Keto Hiking Foods (What I Pack For A Hike!)

Vegan Keto Hiking Foods (What I Pack For A Hike!)

Hiking is pretty much my favorite outdoor activity. Every summer/fall, my sister-in-law and I drive up to the White Mountains in New Hampshire to go hike up a few of NH’s 4000-footers. We like to treat these trips as little de-stressing vacations as well, so…

Vegan Keto Sushi Bowl

Vegan Keto Sushi Bowl

In my carb-eating days, veggie sushi rolls were one of my favorite things to eat. There’s something about the combination of cucumber, avocado and nori that’s just magical. Eating a grain-free, vegan keto diet can make finding sushi a bit more challenging. While many places offer rice-free rolls, now, it’s not super common. I also find that eating sushi on the go can be a little bit of a challenge, so I decided to make this vegan keto sushi bowl, which packs all of the flavors of sushi into an easily-transportable dish. (more…)

Super Easy Vegan Keto Nori Seaweed Salad

Super Easy Vegan Keto Nori Seaweed Salad

Seaweed salad is one of those foods that I really, really just whole-heartedly love. There’s something about the flavors that just makes me so happy. Unfortunately, it’s also one of those foods that tends to be difficult to find in a gluten-free capacity (not to…

Vegan Keto Sloppy Joes (soy-free, gluten-free)

Vegan Keto Sloppy Joes (soy-free, gluten-free)

I like to cook dinner pretty much every night. Cooking is something that I really enjoy, and as I’m always working on new vegan keto recipes, it kind of just makes sense to test them every chance I get. Of course, there are nights that…

Low Carb Vegan Coconut Lime Noatmeal (nut free, soy free, low-FODMAP)

Low Carb Vegan Coconut Lime Noatmeal (nut free, soy free, low-FODMAP)

I’m always on the lookout for plant based keto breakfast options. While I totally understand that any food can technically be a breakfast food, there’s just something about pancakes and hash browns and cereal that is distinctly “breakfasty.” Hot cereal is one of those foods in particular that reminds me of breakfasts as a kid. I loved both cream of wheat and oatmeal, and while neither are on the menu these days, there’s no reason I can’t make my own keto breakfast cereal. So, instead of oatmeal, we’ll be making a low carb vegan keto noatmeal. (more…)
