I really love pancakes, a lot. I also really love all things lemon-flavored, so when Shrove Tuesday (pancake day!!) rolled around again and I decided to treat myself, I thought I’d just combine the two and make some vegan keto lemon pancakes to enjoy!

While coffee will forever be my first love, I’ve actually started drinking black tea in the mornings. That soon progressed to little tea lattes with plain coconut milk, and then I started adding turmeric and other spices for the anti-inflammatory benefits. I have some autoimmune […]
I like to cook dinner pretty much every night. Cooking is something that I really enjoy, and as I’m always working on new vegan keto recipes, it kind of just makes sense to test them every chance I get. Of course, there are nights that I just don’t feel like cooking, so I like to have some options available that I can just heat up and dig into without much fuss. This recipe for vegan keto sloppy joes really fits the bill there. It makes six servings in one go, so you can have dinner ready to go every day without more than 1 hour of effort. 🙂 (more…)
This vegan keto buffalo jackfruit dip is everything you want in a comfort food snack. It’s rich and creamy with a kick of heat, and it’s also absurdly easy to make. Oh, and it’s delicious. Did I mention it was delicious? Because it is. It’s so good, […]
Falafel is one of my absolute favorite foods. It’s New Year’s Resolution time again, which (for a lot of us) means setting or recommitting to healthy eating goals. Whether you are just starting a ketogenic diet, or looking to add some variety and seasonal veggies to your meals, Whole Foods Market has got […]
Hi guys, happy Thanksgiving! I haven’t done a “what I eat in a day” post in a long time and figured that this was a good opportunity to share what I’m making for my vegan keto Thanksgiving celebration this Thursday.
Guys, my cookbook went to print this week!!!!!!! I’m absurdly excited and decided to celebrate this momentous occasion by sharing a recipe from it! Since I’ve been making a lot of pumpkin recipes lately, it only seemed fitting to continue this trend by posting my vegan keto pumpkin bread recipe. Plus, I have half a can of pumpkin in my fridge still, and I’ve got to do something with it… (more…)
Pumpkin is one of those foods that’s kind of low-key keto friendly. In larger quantities, not so much, but when used as a flavoring or in smaller serving sizes, it definitely qualifies as being low carb. It’s also high in beta-carotenes! I really like pumpkin, […]
