It’s getting hotter out where I live, and some days, having to turn on the stove just doesn’t seem like a good idea. So, I’ve been making a lot of meals lately that require zero cooking. I really, really like peanut butter and peanut butter-adjacent […]

Hi, friends! As I recently shared on Instagram, I’ve been having some serious cereal cravings. Usually when this happens, I just make myself some vegan keto chocolate granola (from my cookbook!), this cinnamon granola, or some homemade granola bars… but every once in a while, […]
Even though summer is right around the corner here in New England, it’s actually been a little chilly here and there. Not actually cold, but just nice enough that I can get away with cuddling under a blanket with a nice big bowl of vegan keto comfort food. In the past week or so, I’ve made this recipe quite a few times, as it’s so easy to throw together and so filling. It’s also really nutritous and just hits the spot. While I realize it may not be what comes to mind immediately when you think of comfort food, this low carb vegan tomato and tofu stir fry really hits the spot. (more…)
Like most North American humans, I enjoy eating pizza. A lot. It’s definitely up there in the top five for favorite foods. Of course, trying to come up with a vegan keto pizza crust has been a bit of a challenge over the years. I’ve […]
I’m always looking for vegan, keto-friendly snacks to enjoy from the comfort of my couch while watching TV. I also really like to drizzle nut butters on top of nice cream and over berries with coconut cream (so, so good). It’s not a perfect match, but it definitely comes close. The macros of the commercial version are a bit better, and the taste is a bit richer, but this isn’t too bad for a bit of a budget version!
Low carb vegan mushroom burgers are something that’s been on my “to do” list for a long while. I really like the flavor and texture of a nice, grain-based mushroom burger, but not so much the carbs and their effects. So, I figured it was […]
The other day, I had a crazy craving for some bibimbap, a Korean rice and veggie dish. The problem I ran into was that I couldn’t seem to find a commercial gochujang sauce that wasn’t loaded with sugar – and I mean 8-9g of sugar […]
Spring is in the air, and I’m feeling so energized lately and just craving bright flavors and nutrient-dense foods. This includes nourishing beverages with plenty of liver support, antioxidants and flavor, like this low carb vegan spring superfood latte, which features hibiscus tea, macadamia nuts and some of my favorite superfood powders.
Seaweed salad is one of those foods that I really, really just whole-heartedly love. There’s something about the flavors that just makes me so happy. Unfortunately, it’s also one of those foods that tends to be difficult to find in a gluten-free capacity (not to […]
