Brrrr…soup season is certainly upon us (or not, if you’re reading this from the future…). It’s chilly outside; it’s chilly inside; and everyone is sniffling. This vegan keto ginger pumpkin curry soup fixes all of those issues for me, and tastes darn delicious, too!

Breakfast can be one of the hardest meals to replace when going vegan keto, especially if you’re used to eating convenience foods. While I do enjoy a nice, hearty bowl of noatmeal or chia pudding, some days you just want something a little more substantial […]
Even though summer is right around the corner here in New England, it’s actually been a little chilly here and there. Not actually cold, but just nice enough that I can get away with cuddling under a blanket with a nice big bowl of vegan keto comfort food. In the past week or so, I’ve made this recipe quite a few times, as it’s so easy to throw together and so filling. It’s also really nutritous and just hits the spot. While I realize it may not be what comes to mind immediately when you think of comfort food, this low carb vegan tomato and tofu stir fry really hits the spot. (more…)
Like most North American humans, I enjoy eating pizza. A lot. It’s definitely up there in the top five for favorite foods. Of course, trying to come up with a vegan keto pizza crust has been a bit of a challenge over the years. I’ve […]
A lot of the time, I draw recipe inspiration from non-vegan and non-keto dishes I see in a magazine or on a restaurant menu. This vegan keto kale Caesar salad is no exception. It just looked so good, and thought that it could probably be adapted to be low carb and keto-friendly pretty easily. (more…)
Protein bars can get expensive, so I’ve really been trying to make my own protein bars and bites. It also cuts down on packaging waste, and provides far more flavor options than are available from commercially-produced vegan keto protein bars. I really like green tea […]
I did a keto Q&A the other day on instagram (and then it immediately crashed for 10 hours, naturally). But during the short period of time it was actually up, I received a lot of great questions. Many of them were ones that I honestly just don’t think about after 7-ish years of playing around with veg-keto, so it was nice to get other perspectives. One question I was surprised to receive with some frequency was “what kinds of vegan keto smoothies can I have?” (more…)
I really love pancakes, a lot. I also really love all things lemon-flavored, so when Shrove Tuesday (pancake day!!) rolled around again and I decided to treat myself, I thought I’d just combine the two and make some vegan keto lemon pancakes to enjoy!
