I’m always looking for vegan, keto-friendly snacks to enjoy from the comfort of my couch while watching TV. I also really like to drizzle nut butters on top of nice cream and over berries with coconut cream (so, so good). So, after realizing that buying my own keto-friendly nut butters forever was going to add up over time, I decided to try and make my own version. It’s not a perfect match, but it definitely comes close. The macros of the commercial version are a bit better, and the taste is a bit richer, but this isn’t too bad for a bit of a budget version!

Sweet breakfast foods are hands-down my favorite category of Things I Like to Eat. Pancakes, waffles, “noatmeal” – you name it, and I would like to order it off of a diner menu or from a bakery. Of course, being both low carb and plant based (as well as gluten free) makes this pretty much impossible, and so like with most things, it’s got to be homemade. You guys have probably figured out that apple cinnamon is one of my favorite flavor combinations, and these low carb vegan apple cinnamon breakfast bars are basically my perfect pairing for a nice hot cup of coffee or tea. Every season has certain foods associated with it (at least in my mind), and spring is definitely the time for carrot cake. Apparently, in medieval Europe, carrots were used to sweeten cakes when sugar was difficult to come by. Funny how our palates changed to place carrots firmly on the side of savory. Anyway, because I’m a weirdo, carrot cake is actually one of my favorite desserts, and so I wanted to create a low carb vegan carrot cake recipe to enjoy during the spring (and year-round!).
