Hiking is pretty much my favorite outdoor activity. Every summer/fall, my sister-in-law and I drive up to the White Mountains in New Hampshire to go hike up a few of NH’s 4000-footers. We like to treat these trips as little de-stressing vacations as well, so […]

It’s getting hotter out where I live, and some days, having to turn on the stove just doesn’t seem like a good idea. So, I’ve been making a lot of meals lately that require zero cooking. I really, really like peanut butter and peanut butter-adjacent […]
Hi, friends! As I recently shared on Instagram, I’ve been having some serious cereal cravings. Usually when this happens, I just make myself some vegan keto chocolate granola (from my cookbook!), this cinnamon granola, or some homemade granola bars… but every once in a while, it just doesn’t cut it and I want something that has been put through an industrial extruder. So, when I saw Catalina Crunch cereals, I knew I had to try them to see if it could help satisfy that craving.
Even though summer is right around the corner here in New England, it’s actually been a little chilly here and there. Not actually cold, but just nice enough that I can get away with cuddling under a blanket with a nice big bowl of vegan […]
Hello, friends! Let’s get right into it – who in their right mind doesn’t like crispy fries? If you answered, “me,” this might not be the recipe for you. But, for the rest of you intrepid veg-ketoers, stick around. I’m a huge fan of crispy […]
If you follow me on instagram and see the stories I post, you’ll notice I eat a lot of nut/seed butters. As a snack. From the jar. So, I realized I would have to take a different approach and modify an already-existing keto recipe from my blog for this low carb vegan keto chocolate hazelnut spread. (more…)
Like most North American humans, I enjoy eating pizza. A lot. It’s definitely up there in the top five for favorite foods. Of course, trying to come up with a vegan keto pizza crust has been a bit of a challenge over the years. I’ve […]
Low carb vegan mushroom burgers are something that’s been on my “to do” list for a long while. I really like the flavor and texture of a nice, grain-based mushroom burger, but not so much the carbs and their effects. So, I figured it was […]
The other day, I had a crazy craving for some bibimbap, a Korean rice and veggie dish. The problem I ran into was that I couldn’t seem to find a commercial gochujang sauce that wasn’t loaded with sugar – and I mean 8-9g of sugar per tablespoon levels of sugariness. This obviously was not going to fly, so I scoured the internet for homemade versions. After some trial and error with a few recipes for a quick gochujang, I arrived at this vegan easy homemade keto gochujang that is sugar-free, guten-free, soy-free and low-carb.
