I really love pancakes, a lot. I also really love all things lemon-flavored, so when Shrove Tuesday (pancake day!!) rolled around again and I decided to treat myself, I thought I’d just combine the two and make some vegan keto lemon pancakes to enjoy!
If you’ve taken a peek at my instagram account any time in the past week or so, you’ll see that I’ve gone a little pizza-crazy. Okay, so I posted pizzas twice both in my feed and my stories, but still. That’s 100% more pizza than I’ve posted the rest of the year, so it feels like a vegan keto pizza overload. Every once in a while, I fixate on a certain flavor or flavor profile. Since it’s winter where I am, I’ve cycled back to wantingcinnamon and maple on everything. I’ve mostly been indulging in some protein waffles with added cinnamon, topped with sugar-free maple syrup, but I’ve been wanting something a little more portable lately. I’m going away for two nights and thought I’d come up with a quick and easy solution to the whole “hotel breakfast” issue (namely that it mostly isn’t remotely vegan or gluten-free, never mind keto-friendly).
